Hi everyone,

I am getting ready to graduate soon, in August, and join the masses in earning my keep. This semester is pretty taxing, we are doing 12 hour clinical rotations at New York Presbyterian hospital in the city.

The people we are working with have so many chronic illnesses and sometimes it is a little overwhelming. But the gratitude and hope I see in their eyes reminds me why we fight every day...to live one more day...to love one more day...because of our family and the people whom we care for and who love us in return.

First time blog

I'm finally able to take some time and join the world of blogging. The past 3 weeks since Sam and I got back from the Virgin Islands all I've been doing is working. We just finished up our Rollout 2 data loads at the pharmaceudical company where I'm currently working. They are doing a three phase SAP implementation. For those of you not familiar with SAP its computer software that many large corporations use to run their businesses. During Rollout 1 we implemented the sales and distribution module of SAP. Rollout 2 is to implement purchasing and manufacturing for a plant in Virginia. Rollout 3 will be to implement purchasing and manufacturing for all the other plants.

Presto Pesce Italiano

1/2 lb fish fillet or 1 lb whole fish per person
1 onion per person, sliced garlic if desired
2 or 3 tiny fingerling potatos per person (optional; you can just eat the stew, or you can cook a little rice or pasta on the side)
1/2 can plum tomatos per person
virgin olive oil, salt, pepper
half and slice (3/8 in) the onions
In a large deep turkey roaster (non-stick) toss the onions, and potatoes, in olive oil salt and pepper and at least partially seperate the onion slices.
Broil the onions, and potatos, at least 4 in. from the broiler, tossing them once or twice, till starting to wilt and brown and soften, about 10 min.

Thursday morning

'morning all. Happy Anniversary Mom and Dad. We Love You. I see Patty's on line. Nice blogging with Kara. She'll probably help some of us with our motivation. I like the JCC a lot. It's open almost every day and long hours, and is directly on my route home. It's family oriented and I get lots of "Hi Doctor Woods" when I'm there. Very nice exercise room, a full gym, olympic pool, hot tub, sauna, and steam room.

Susan and I are into NYC this weekend to see La Traviata. When there we usually get to the Met Museum as well.

Of Internships and Engineering

Plant VogtleWell, I'm not a Woods or a (full) Davidson, but someone has to represent our distant (Smith) corner of the family ;-). I've returned to the University of Tennessee after working an engineering internship in Augusta, Georgia last semester. I worked at a nuclear power plant; it was a great experience--I learned a ton about the industry. There wasn't much to do in Augusta, however... I describe it at length at my Xanga weblog. Most of my classes now are about obscure chemical engineering stuff, but I'm also taking Technical Editing and Organic Chemistry. Joy. It's actually one of the easiest semesters I've had yet... Again, more here.

Second Medical Check-in

We get checked in every Wednesday here and have an opportunity to meet with a Dr. At other points in the week we meet with our Behavioral Health and Nutrition specialists individually.

The check-in (and weigh-in) have been serious positive motivators. There's always a worry that you're not working hard enough or that for some reason the fat is gonna just refuse to come off. But I've been very satisfied so far. Some of my friends are finding it more difficult since the first week, and the loss of all our water weight, to keep losing, because of physical limitations when working out, or menopause...some things really slow down your metabolism.:) Being young and having a relatively high resting metabolic rate are helpful in this case.

Screamin Mean Greens

SCREAMIN' MEAN GREENS

SERVES 4 TO 6

2 medium onions, chopped

1/4 cup vegetable oil

2 jalapeños, seeded and finely chopped (optional)

5 pounds assorted greens, such as collard, kale, mustard, and turnip greens, rinsed, tough stems discarded, torn into large pieces

One (1 1/2-pound) smoked turkey wing

Coarse salt and freshly ground pepper

1. In a large pot, combine onions, 2 cups water, oil, and jalapeños, if using; bring to a boil over high heat. In batches, stir in greens, allowing greens to wilt between each addition. Add turkey wing, covering it with greens. Season with salt and pepper. Cover, reducing heat to medium-low, and cook, stirring occasionally, just until greens are tender, about 30 minutes; do not overcook greens.
