Morning Glory Muffins

 Morning Glory Muffins by Bob’s Red Mill 

2 cups whole wheat flour 

1 cup sugar 

2 tsp baking soda

1 TBSP cinnamon 

½ tsp salt 

¾ cup unsweetened shredded coconut 

3 eggs 

½ cup oil

½ cup applesauce 

2 tsp vanilla 

1 cup grated apple 

2 cups grated carrot 

8 oz can crushed pineapple, drained 

1 cup chopped walnuts 

½ cup raisins 

2 TBSP diced crystallized ginger 

 

Fill muffins completely. Bake at 350° 25-30 minutes.
