Strawberry, Goat Cheese & Arugula Salad

Serving size 2 to 3 servings   

Ingredients

·         1 5-oz container of organic, pre-washed arugula

·         ½ pint organic strawberries, washed and sliced

·         2 oz soft goat cheese, crumbled

·         2 Tbsp nuts of your choice

·         Salt & pepper

·         Lemon vinaigrette, to taste

Instructions

1.     Place greens in a large bowl.

2.     Top with remaining ingredients and a tiny pinch of salt & pepper.

3.     Drizzle with desired amount of dressing and toss before serving.

Lemon Vinaigrette

 
Ingredients
  • Juice of 2 lemons
  • 2 Tbsp raw honey
  • 1 tsp Dijon mustard
  • ¼ cup extra virgin olive oil
  • Generous pinch of salt
  • Small pinch of pepper
 
Instructions
  1. In a medium bowl, whisk together all ingredients. Season to taste with salt and pepper.
  2. Store any leftover dressing in the fridge for up to a week
