Strawberry, Goat Cheese & Arugula Salad

Serving size 2 to 3 servings
Ingredients
· 1 5-oz container of organic, pre-washed arugula
· ½ pint organic strawberries, washed and sliced
· 2 oz soft goat cheese, crumbled
· 2 Tbsp nuts of your choice
· Salt & pepper
· Lemon vinaigrette, to taste
Instructions
1. Place greens in a large bowl.
2. Top with remaining ingredients and a tiny pinch of salt & pepper.
3. Drizzle with desired amount of dressing and toss before serving.
Lemon Vinaigrette
Ingredients
- Juice of 2 lemons
- 2 Tbsp raw honey
- 1 tsp Dijon mustard
- ¼ cup extra virgin olive oil
- Generous pinch of salt
- Small pinch of pepper
Instructions
- In a medium bowl, whisk together all ingredients. Season to taste with salt and pepper.
- Store any leftover dressing in the fridge for up to a week
