Cathy's Black Bean Salad

Ingredients:

1(15.5 oz.) can of black beans

1 (11 oz.) can of Mexi-corn

1/2 cup of diced red bell peppers

4 tbsp. fresh chopped cilantro

3 tbsp. rice vinegar

 

Directions:

1. Drain and rinse the black beans and corn

2. Chop tomato and cilantro and bell pepper

3. Mix together - sprinkle seasoned vinegar to taste over all and serve on a bed of shredded lettuce.
