Pam Davidson's Taco Soup

 

Ingredients:
1 lb. very lean ground beef
1 medium onion, diced
1 pkg. Taco seasoning mix (I like Taco Bell brand)
1 can Ranch style beans
1 can pinto beans (with jalapeños, if preferred)   (I used 2 cans Luck pinto beans      and removed the pork chunk, then omitted the Ranch style beans)
1-1/2 cups water
1 can tomatoes with green chilies (Rotel)
1 can diced tomatoes (I like the petite diced tomatoes)
1 can whole kernel corn (do not drain)
1 can hominy
Salt to taste
 
Directions:
Combine the ground beef and onion; sauté until beef is browned and onions are tender. Add taco seasoning and water.
 
In a large stockpot, combine the beef mixture and remainder of ingredients. Simmer over low heat for about 1-1/2 hours. (I combined all into a crock pot and cooked on low for about 6 hours)
