Irish Soda Bread

4 cups flour 1 ¼ tsp baking soda 2 cups very sour milk (see note) 1 tsp salt ½ cup sugar 1 cup raisins 1 ½ Tbsp. Crisco Sift flour, salt, sugar and soda. Add Crisco, mixing well. Add raisins. Add sour milk, mixing well. Put into a well greased and floured pan. Preheat oven and bake for approximately ¾ hr. at 400 degrees. Test center with toothpick. Take out of pan immediately and cool on a rack. Note: Add 3 Tbsp. White vinegar to each cup of milk to sour, let sit to curdle. The dough will be moist like a heavy cake mixture. Do not knead it. Put into the pan with a spatula , gently pat top of dough with floured hands to even the dough in the pan. Makes 1 loaf in a 8” by 2” pan Anne Woods 2002

The pan is an 8 inch round cake pan.  Last time I made this I substituted about 1/3 of the all purpose flour with whole wheat flour and it was delicious.
