Morning Glory Muffins

Ingredients

  • 2 cups whole wheat flour
  • 1 cup sugar
  • 2 teaspoons baking soda
  • 1 tablespoon cinnamon
  • 0.5 teaspoon salt
  • 0.75 cup unsweetened shredded coconut
  • 3 eggs
  • 0.5 cup oil
  • 0.5 cup applesauce
  • 2 teaspoons vanilla
  • 1 cup grated apple
  • 2 cups grated carrot
  • 8 ounces (1 can) crushed pineapple, drained
  • 1 cup chopped walnuts
  • 0.5 cup raisins
  • 2 tablespoons diced crystallized ginger

Instructions

Fill muffins completely. Bake at 350 ℉ for 25-30 minutes.
