Ground Beef Curry

Ingredients

  • 2 pounds ground beef
  • 3 tablespoons oil
  • 2 tablespoons mustard seeds
  • 0.25 cup coconut, finely ground
  • 1 tablespoon cashews, optional, unsalted
  • 2 tablespoons curry powder
  • 0.25 teaspoon chili powder
  • 1 cup beef broth
  • 0.25 teaspoon salt
  • 0.25 teaspoon cinnamon
  • 0.25 teaspoon pepper
  • 1 can tomatoes, large, stewed or diced

Instructions

Brown beef and drain.

Fry mustard seeds in 3 T oil until browned.

Combine mustard seeds and all ingredients except curry, coconut, and cashews; simmer 1/2 hour.

Add curry, coconut, and cashews and simmer 10 min. more.

Serve with rice and boiled cabbage.
