Chicken Salad with Fruit and Nuts

Total time: 45 minutes
Yields: 8 servings

Ingredients

    For the Salad
  • 1 pound cooked boneless chicken breast
  • 2 tablespoons chopped fresh parsley
  • 0.5 cup walnut halves
  • 0.75 cup raisins
  • 0.5 pound red seedless grapes
  • 2 apples, unpeeled, diced
  • 0.5 cup French dressing
  • 0.5 cup buttermilk basil dressing
  • For the Buttermilk Basil Dressing
  • 0.5 cup powdered non-fat milk
  • 1 Tbsp sugar
  • 2 Tbsp dried basil
  • 2 tsp dehyrated minced onions
  • 1 tsp dried parsley
  • 1 tsp dried mustard
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • For the French Dressing
  • 0.3333 cup Lemon juice or vinegar
  • 0.66666 cup olive or salad juice
  • 1.5 tsp salt
  • 1 tsp sugar
  • 0.5 tsp dried mustard
  • 1 garlic clove, finely minced

Instructions

Cut chicken into medium sized pieces. Toss with French dressing. Allow to marinate for 15-20 minutes.

Add remaining ingredients.

Add buttermilk dressing.

Garnish with grapes and fresh parsley.
