Basic Pesto

Ingredients

  • 2 cups basil leaves - no stems, packed
  • 4 tablespoons pine nuts or walnuts
  • 2 garlic cloves, finely chopped
  • 0.5 cup olive oil, to taste
  • 0.33 cup parmesan cheese, freshly grated
  • 0.5 teaspoon salt, to taste

Instructions

Mix basil leaves, nuts, and garlic in a food processor until finely chopped.

Slowly add olive oil until the pesto reaches your desired consistency.

Remove pesto from the food processor and slowly add cheese and salt to taste.

When freezing - mix basil, nuts and olive oil only. Add other ingredients when defrosted to use.
