MH's Curry Chicken with Cashews or Peppers

  I use an amount of chicken, white, and or dark meat, for the size of casserole dish I will bake with.  Cut the chicken into large pieces. Place in casserole.   In bowl mix together 1 or 2 cans of cream of chicken soup, and  half that amount of mayonnaise.  Add curry power.  Spoon over chicken.  Cover with foil and back at 350 for 1 hour.   After 1/2 hr. sprinkle cashews over and stir in. 

I also use thinly sliced peppers of different colors ( yellow, red, green) instead of cashews and mix in with the chicken and sprinkle some on top for color.
