Pesto

2 cups packed fresh basil leaves - no stems.
4 tbsp. pin nuts or walnuts
2 lg cloves garlic or substitute crushed garlic
½ - ¾ c. olive oil
1/3 c. freshly grated parmesan cheese
½ tsp salt to taste
Mix basil leaves, nuts, garlic, finely chopped in a food processor. Slowly add olive oil. Remove pesto from machine and slowly add cheese.
When freezing - mix basil, nuts and olive oil only. Add other ingredients when defrosted to use.
