Chocolate Meringue Pavlova

6 egg whites
1 cup sugar
3 TBSP cocoa
1 tsp balsamic or red wine vinegar
2 oz bittersweet chocolate finely chopped
 
Preheat oven to 350. Beat egg whites until glossy and holds peaks.
Continue to beat adding sugar spoonful at a time until stiff and shiny.
Sprinkle cocoa, vinegar and chocolate over top and fold in thoroughly until
incorporated. Spread on baking sheet lined with parchment paper – 9 inch circle. Smooth top and sides. Place in oven & immediately reduce heat to
300 degrees. Bake 1-1 ¼ hour until dry on top but squishy inside.
Open oven a bit and let cool completely (about 1 hour).
Spread top with whipped cream and berries. Sprinkle with
chocolate curls.
