Chili con Carne
1/2 pound lean boneless pork 1 tablespoon olive oil 1 pound ground lean beef 3 cups finely chopped onions 2 tablespoons finely minced garlic 3 tablespoons chili powder 2 teaspoons ground cumin 1 tablespoon dried, crumbled oregano 1 bay leaf 1/2 teaspoon or to taste dried, hot red pepper flakes Salt to taste, if desired Freshly ground pepper to taste 3 cups imported canned tomatoes 3 teaspoons tomato paste 2 cups fresh or canned beef broth 1/4 cup chopped fresh cilantro or fresh coriander leaves, optional.
1. Cut pork into quarter-inch cubes. 2. Heat oil in kettle and add pork and beef. Cook, stirring and chopping down with side of heavy metal kitchen spoon to break up lumps. Cook until meat loses raw look.
3. Add onion and garlic and cook, stirring, about three minutes. Add remaining ingredients except cilantro. Bring to boil and let simmer 30 to 45 minutes. Stir in cilantro.
Yield: 8 or more servings.
